Ham and egg brekkie burgers with kimchi mayo

Love bacon and egg rolls but looking to mix things up a bit? Try these ham and egg brekkie burgers served with a spicy kimchi mayo.

Don’t like ham? You can swap it for fried bacon. Or make it vegetarian by swapping the ham for slices of fried tofu.

Method

1.Preheat chargrill plate (or frying pan) on high. Split brioche rolls; place, cut-side down, on chargrill plate for 1 minute or until grill marks appear. Remove from heat; keep warm.
2.Blend or process ¾ cup kimchi and the mayonnaise in a small blender or food processor until combined but still slightly chunky.
3.Heat olive oil in a non-stick frying pan over high heat. Crack eggs into pan; cook for 1½ minutes or until whites are crisp and golden around the edge and yolk is still soft.
4.Spread base of brioche rolls using half the kimchi mayo. Top with smoked ham, remaining kimchi, fried egg and remaining kimchi mayo; season. Place lids on top of burgers.

Add mizuna or another salad green to the rolls for crunch.

Kimchi and Japanese mayonnaise (kewpie mayo) are both available in the Asian food section of major supermarkets.

SWAP IT: Use bacon or grilled slices of tofu instead of the ham.
