1.Place mango and salt in a large bowl; barely cover with cold water. Cover; stand overnight.
2.Drain mango and discard water. Stir sugar and vinegar in a large saucepan over heat, without boiling, until sugar dissolves. Stir in mango and remaining ingredients. Simmer, uncovered, stirring occasionally, about 45 minutes or until mixture is thick.
3.Pour into hot sterilised jars and seal.
