Ginger beer

1.Combine ginger and water in a medium non-reactive saucepan. Bring to the boil. Reduce heat; simmer, uncovered, 5 minutes. Remove from heat. Cover and stand overnight until cool.
2.Strain ginger mixture through a fine sieve into a large jug. Return to same cleaned saucepan with sugar. Stir over low heat until sugar dissolves and bring to the boil. Reduce heat. Simmer without saucepan lid without stirring for 5 minutes. Remove from heat and stir in juice. Strain mixture into a large jug; cool. Pour into sterilised bottles; keep refrigerated.
3.Just before serving, mix by adding four parts sparkling mineral water to one part ginger beer, or to taste.

Use a non-reactive stainless steel, enamel or glass saucepan for this recipe.
