1.Cut chicken in half horizontally to form thin fillets.
2.Heat oil in large frying pan, cook chicken, in batches, over high heat until browned both sides and just cooked through. Remove from pan, cover to keep warm.
3.Add onion to same pan, cook, stirring, until soft. Stir in combined cornflour and stock, stir until mixture boils and thickens. Add cheese, stir until melted. Stir in herbs.
4.Melt butter in frying pan, cook beans, stirring, until almost tender. Add garlic and capsicum, cook, stirring, until tender.
5.Serve chicken with vegetables, sauce and bread, if desired.
