1.Cook sausages in heated oiled large frying pan until cooked through. When cool enough to handle, slice sausages thinly.
2.Spread inside of pitta with baba ghanoush; fill with tabbouleh and sausage.

We used beef sausages here, but this snack would be just as good with chicken, pork or lamb sausages depending on your child’s tastes. You can replace the baba ghanoush with hummus.
