Fetta, spinach and prosciutto lamb rolls with herbed kipflers

1.Boil, steam or microwave potato until tender; drain. Place in large bowl with butter and parsley; cover to keep warm.
2.Meanwhile, slightly overlap three slices of the prosciutto, side by side, on a board. Layer with a quarter of the spinach, a quarter of the cheese and one piece of lamb. Roll carefully to completely enclose lamb. Repeat with remaining prosciutto, spinach, cheese and lamb.
3.Heat oil in a large frying pan. Cook lamb rolls about 15 minutes or until browned all over and cooked as desired. Cover lamb; stand 10 minutes.
4.Serve lamb thickly sliced, with potatoes.
