Method

1.In a medium bowl, combine garlic, mustard, juice and oil with lamb.
2.On a heated oiled grill plate (or grill or barbecue), cook lamb for 4-8 minutes each side, or until cooked to your liking. Cool.
3.Meanwhile, to make the tabbouleh: Place burghul in a large heatproof bowl, add water; cover, stand for 5 minutes, or until water is absorbed. Stir in remaining ingredients; toss gently to combine.
4.Place lamb on serving plates with the tabbouleh in a separate bowl. Serve.

The cutlets can be marinated overnight, then cooked the next day. The tabbouleh is best made on the day.
