1.Place ribs in a large saucepan with enough cold water to cover. Cover; bring to the boil. Reduce heat to low; skim away impurities from the surface. Simmer, covered, 45 minutes. Drain.
2.Combine remaining ingredients in a large bowl, add ribs; turn to coat. Cover; refrigerate at least 2 hours or overnight, turning occasionally.
3.Preheat oven to 200°C.
4.Place ribs and marinade in a large baking-paper-lined dish; season. Roast 1 hour, turning and brushing every 15 minutes with pan juices. Cut into individual ribs to serve.
