1.Preheat oven to 240°C/475°F.
2.Drain pears over small bowl; reserve juice, chop pears coarsely.
3.Drain apricots, discard juice. Chop apricots coarsely.
4.Place pork in oiled baking dish; drizzle with oil. Roast, uncovered, about 20 minutes or until cooked as desired. Cover pork; stand 5 minutes then slice thickly.
5.Meanwhile, combine pear, apricot, reserved juice and remaining ingredients in medium saucepan; bring to the boil. Simmer, uncovered, about 20 minutes or until relish thickens slightly.
6.Serve pork with relish.
