Method

1.Place noodles in a large heatproof bowl; cover with boiling water. Stand until just tender; drain.
2.Lightly spray a heated wok with oil; stir-fry pork, in batches, over high heat, for 2 minutes or until browned. Transfer to a small bowl.
3.Add onion, garlic and ginger to wok; stir-fry for 2 minutes. Return pork to wok, add broccolini and spice; stir-fry for 2 minutes or until broccolini is tender. Add sauce; stir-fry until heated through. Remove from heat.
4.Add basil and nuts to wok; toss to combine. Serve with rice noodles.

Replace pork with sliced chicken breast or beef rump steak. You can use basil if thai basil is out of season or you could replace the basil with coriander. Broccolini can be swapped with baby corn, if you like.
