Creamy, cheesy and golden, this French onion potato bake is the ultimate winter side dish to your favourite roasts. For this recipe we’ve used the versatile, time-saving and no-fuss appliance, the Instant Pot.

How to cook this Instant Pot recipe in the oven

Don’t have an Instant Pot yet? Bake this in your oven! Follow step 1. In step 2, bake in a preheated oven at 200°C/180°C fan-forced for 2 hours or until potato is almost tender. In step 3, set oven temperature to 220°C/200°C fan-forced, remove foil and bake for a further 30 minutes or until tender and golden.

Lightly grease a 20cm round cake pan. Arrange potatoes upright in stacks of slices around the edge of the pan, then work towards the centre to completely cover the base of the pan, scattering with thyme as you go.

Combine soup mix, cream, milk and parmesan in a large jug; season with salt and pepper. Pour mixture evenly over the potatoes and let it settle. Cover the pan with foil. Place pan in the inner pot. Cover with the instant pot’s air fryer lid. Select Bake and set temperature to 180°C and time for 2 hours.

Remove the foil, then re-cover with the air fryer lid. Select Bake and set temperature to 200°C and time for 30 minutes; Bake until potato is tender and top is golden.

Stand bake for 10 minutes before serving. Serve topped with extra thyme leaves.

Fold two lengths of foil into long strips and cross under base of the cake pan to act as a sling; this will make it easier to lower and lift the pan into and out of the inner pot.
