Vanilla Citrus Salad



1.Remove the rind from one lime and one orange using a zester. Or, peel rind thinly with a vegetable peeler, avoiding any white pith. Cut rind into thin strips. Transfer to a large bowl.
2.Remove the skin and pith from the limes, oranges and grapefruit with a small sharp knife. Holding the grapefruit over the bowl, remove the segments by running the knife between each of the membranes. Squeeze any excess juice into the bowl. Thinly slice the limes and oranges and add them to the bowl.
3.Split the vanilla bean lengthways; scrape out the seeds. Add the vanilla seeds and sugar; stir well. Cover and refrigerate for 1 hour.
4.Divide the fruit between four serving bowls. Drizzle with honey and serve with yogurt, if desired.
