Preheat oven to 170°C (150°C fan-forced). Grease a 20cm springform pan.
Using a food processor, process broken biscuits into fine crumbs; slowly add the melted butter until combined. Press crumb mixture evenly over the base and halfway up the side of the prepared pan. Refrigerate while preparing the filling.
Beat cream cheese and sugar using electric mixer until smooth. Add eggs, one at a time, beating after each addition. On low speed, add the tablespoon of brandy, ginger, flour and mascarpone, beat until combined.
Spoon the mixture into the pan, bake for 1 hour. It should be a little wobbly in the centre. Cool in the oven with door ajar. Refrigerate several hours or overnight.
BRANDIED CHERRIES
Put the cherries, sugar and brandy into a small saucepan. Cook for 5 minutes or until the cherries look glossy. Dissolve cornflour and 1 tablespoon of water in a small ramekin, stir into cherry mixture; cook, stirring until mixture thickens. Remove from heat; cool.
Just before serving, spoon Brandied Cherries over the top of the cheesecake, decorate with extra fresh cherries.
If you want to get organised, the cheesecake can be frozen a week or two ahead. Thaw and then refresh in a 160°C oven for 20 minutes. Add brandied cherries just before serving.
