This cornflake slice is made from just a handful of pantry staples like cornflakes, brown sugar, and melted chocolate, so you can whip up this festive treat in minutes. With a base recipe plus ideas for variations (see below), its sweet, crisp texture makes it a fun addition to your Christmas.

Cornflake slice is ideal for busy days when you need something quick but crowd-pleasing. Easy to make, irresistibly delicious and sure to satisfy everyone’s sweet tooth in no time.

Grease and line the base and sides of a19cm x 29cm rectangular slice pan, bringing paper 3cm above the long sides. Preheat oven to 180°C (160°C fan-forced).

Place the cornflakes in a large bowl.

Combine the butter, sugar and salt flakes in a medium pan, cook, stirring, over medium heat until butter is melted. Simmer, stirring, for 2 minutes or until sugar has dissolved and mixture has thickened slightly.

Immediately pour mixture onto the cornflakes and stir to coat; spread into prepared pan. Bake for 15 minutes or until deep golden brown. Cool in the pan then refrigerate for 30 minutes to firm up.

Remove the base from the pan. Spread chocolate evenly over the surface and sprinkle with a few extra salt flakes. Refrigerate until chocolate is set.

6.

Using a large hot knife, cut into 8 pieces to serve.

Store in an airtight container in the refrigerator for up to one week.

Cornflake slice variations

Serve it without the chocolate topping, or switch up the flavours and make a white chocolate version the kids will love! Substitute the dark chocolate for white and swap the salt flakes for crushed candy canes.
