This combination of roasted nuts and currants makes a delicious, healthy and filling snack for kids and adults on the go.

1.Preheat oven to 180°C. Line two large oven trays with baking paper.
2.Combine nuts, pepitas and flaked coconut in a large bowl.
3.Combine egg white, dukkah and salt in a small bowl; add to nut mixture. Stir until well combined. Divide mixture between trays in a single layer.
4.Bake for 10 minutes. Sprinkle each tray with currants; bake for a further 8 minutes or until browned lightly and fragrant. Cool on trays. Separate trail mix into small clusters. Transfer to an airtight container.
