1.Cook mushrooms, zucchini and eggplant, in batches, on heated oiled grill plate (or grill or barbecue) until browned lightly and just tender.
2.Place pitas on oven trays; spread evenly with pizza sauce. Sprinkle a quarter of the cheese over each pita; top with mushroom, zucchini and eggplant. Sprinkle with remaining cheese; sprinkle with thyme.
3.Bake, uncovered, in very hot oven about 10 minutes or until pizzas are browned and crisp.
