Lemon meringues

It's one of those classic pairings, like cookies and cream or peanut butter and chocolate. These lemon meringues will suit everyone, from sweet-tooth lovers to those of us who appreciate something with a little more zest.

Method

1.To make lemon curd whisk all ingredients except butter until well combined.
2.Pour into a medium saucepan and gently whisk over heat until mixture comes to the boil and thickens. Remove from heat and gradually whisk in butter until well combined.
3.Cover curd with baking paper and refrigerate until cold.
4.Preheat oven at 120°C (100°C fan-forced).
5.To make meringues, line a large oven tray with baking paper. Using an 8cm round cutter, trace six circles using pencil about 6cm apart on baking paper, turn paper over so pencil will not come in contact with meringue .
6.Beat egg whites until light and fluffy, gradually add sugar while beating, one tablespoon at a time until all the sugar is incorporated. Continue beating on high to dissolve sugar. (Whole process should take 7 minutes).
7.Spoon meringue into centre of each circle and make a small nest in top of meringue using the back of a spoon.
8.Cook meringues for 40 minutes and leave in oven to cool with door slightly ajar.
9.Serve meringues topped with a dollop of lemon curd and whipped cream. Decorate with strawberries and mint leaves.
