Lamb and spinach gozleme

This gorgeous Turkish gozleme recipe is complete with a a buttery homemade pastry and a spicy lamb, spinach and feta filling. Serve with a drizzle of lemon for an easy lunch or dinner.

1.Sift flour and salt together into a large bowl. Make a well in the centre; gradually stir in water, mixing to form a firm dough.
2.Knead dough on floured surface about 5 minutes, or until smooth and elastic. Return to bowl. Cover with a clean tea towel.
3.To make filling, heat oil in a large frying pan on high. Saute onion and garlic 3-4 minutes, until tender. Stir in cumin, sumac and chilli; cook 1 minute. Add mince; cook 4-5 minutes, until browned. Transfer mixture to a bowl. Cool 10 minutes. Stir cheese and spinach through; season to taste.
4.Divide dough into 6 portions. Roll each piece into a 30 x 40cm rectangle. Transfer to a greased tray.
5.Spoon filling evenly over one half of each rectangle. Fold over dough to enclose; fold over edges to seal.
6.Heat a large frying pan on medium.
7.Brush gozleme with oil; cook 3-4 minutes each side, until browned and crisp. Repeat with remaining gozleme. Cut into squares. Serve with lemon wedges.
