1.Preheat oven to 160°C (140°C fan-forced). Grease oven tray and line with baking paper. Mark two 9cm circles on paper.
2.Beat egg whites in a small bowl with electric mixer until soft peaks form. Gradually add sugar, beating until dissolved between additions. Fold in sifted flour, essence, butter and rind.
3.Drop one level tablespoon of mixture into centre of each circle on oven tray, spread evenly to cover circle completely; sprinkle with a little coconut. Bake about 5 minutes.
4.Working quickly, loosen cookies from tray, place message in the centre of cookies; fold in half then gently bend cookies over edge of a glass. Cool 30 seconds. Transfer to wire rack to cool. Bake two cookies first, but have another tray ready to go into the oven when you remove the first two. Repeat with remaining cookie mixture and coconut.
