Pasta bake is one of those ideal go-to dinner ideas. Not only is it a delicious midweek meal, it’s also easy to make and easier to clean up!
This incredibly versatile vegie has become quite trendy over the past few years, with cooks realising its potential to create healthy, grain-free alternatives to classic dishes like pizza, fried rice and couscous.
1.Preheat grill (broiler). Oil a 2-litre (8-cup) ovenproof dish.
2.Cook pasta in a large saucepan of boiling water until just tender, drain.
3.Meanwhile, to make cheese sauce, melt butter in a medium saucepan, add flour, cook, stirring, until bubbling. Gradually stir in milk, cook, stirring, until mixture boils and thickens. Remove from heat, stir in 1 cup of the cheese, and the parsley.
4.Combine pasta, cheese sauce and cauliflower in a large bowl, stir in egg. Spoon mixture into dish, top with combined breadcrumbs and remaining cheese, sprinkle with nutmeg.
5.Place under hot grill about 10 minutes or until golden brown.
