Lightly beat eggs and 1 tablespoon water in a shallow bowl. Combine breadcrumbs and seasoning in a second shallow bowl. Dip prawns in egg, then coat in breadcrumb mixture. Spray generously all over with cooking spray.

Preheat a 7-litre air fryer to 180C for 3 minutes.

Taking care, place prawns, in a single layer, in the air fryer basket; cook for 6 minutes, turning halfway through cooking time, until
golden brown and cooked through.

Trim ends from baguette and discard; cut into four even pieces, then split horizontally, being careful not to cut all the way through. Spread bases with mayonnaise, then fill with lettuce, tomatoes, gherkins and prawns. Drizzle with extra mayonnaise and sprinkle with chopped chives. Serve with extra gherkins.
