Air fryer chicken chimichangas

Create these fried Mexican favourites in your air fryer for a tasty dinner.

Create gorgeous crispy chicken chimichangas in your air fryer. This super easy recipes used pre-cooked shredded chicken flavoured with taco seasoning and wrapped in a flour tortilla then baked in the air fryer until crispy and served with a fresh avocado salsa. Chimichangas are traditionally a deep fried product so we’ve made them less oily by using the air fryer.

Combine chicken, seasoning, cheddar and 1/3 cup taco sauce in a bowl, then season. Divide chicken mixture among tortillas, placing along the centre of each one; flatten chicken mixture slightly and shape into a rectangle. Fold in ends of tortillas, then roll up to enclose filling. Spray all over with cooking spray.


Preheat a 7-litre air fryer to 180˚C/350˚F for 3 minutes.


Taking care, place chimichangas in the air fryer basket, seam-side down; at 180˚C/350˚F, cook for 12 minutes, turning halfway through cooking time, until golden and filling is hot.


Meanwhile, to make avocado salsa, combine avocado, tomato, onion, coriander, lime juice and oil in a bowl, then season.


Divide chimichangas, lettuce and avocado salsa among plates. Drizzle the chimichangas with remaining taco sauce and serve.
