1.Finely chop lemongrass and lime leaves. Peel and grate ginger. Combine lemongrass, lime leaves and ginger in large bowl with dried fruit. Stir in bran, coconut and oats.
2.Heat honey, butter and sugar in small saucepan, without boiling, until sugar dissolves. Bring to the boil. Reduce heat; simmer, uncovered, without stirring, about 7 minutes or until a small amount dropped in a cup of cold water forms a soft ball (or until the mixture reaches 116°C/240ºF on a candy thermometer).
3.Add honey mixture to dry ingredients; mix until well combined. Cool 5 minutes, then roll level tablespoons of mixture into balls. Place on baking-paper-lined tray. Cover; refrigerate until set.
Store the balls in an airtight container, separated with baking paper, at room temperature, for up to 1 week.
