Method

1.Place zucchini in medium non-metallic bowl; sprinkle with salt, mix well. Cover; stand 2 hours.
2.Rinse and drain zucchini mixture well; squeeze excess water from zucchini, drain on absorbent paper.
3.Combine zucchini, apple, onion, sultanas, vinegar and spices in medium saucepan; bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 20 minutes or until mixture is pulpy. Add sugar; stir over high heat, without boiling, until sugar dissolves. Bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 15 minutes or until relish is thick.
4.Spoon hot relish into hot sterilised jars; seal immediately. Label and date jars when cold.

Granny Smith apples are best for this recipe.
