If fresh broad beans in the pod are available, you will need to buy 1kg. Remove the outer long green pod, then blanch as for frozen beans in step 1 to remove the beige skin. You need about 5 large zucchini for this recipe. Use the freshest eggs possible for poaching, as they will hold their shape better. Zucchini takes the place of pasta here; if you prefer pasta instead, cook 500g linguine following packet directions and add to the frying pan in step 5.
