Warm balsamic mushroom and pancetta salad
- 8 slice pancetta
- 1/2 cup balsamic italian dressing
- 1/3 cup water
- 500 gram small button mushrooms
- 1 teaspoon fresh thyme leaves
- 90 gram mesclun lettuce
- 90 gram feta cheese, crumbled
Method
Warm balsamic mushroom and pancetta salad
- 1In a large heated oiled frying pan, cook pancetta until crisp. When cool enough to handle, break into large pieces.
- 2In the same frying pan, heat dressing and water, add mushrooms and thyme; cook, stirring, until mushrooms are tender and liquid has almost evaporated. Season to taste.
- 3Combine mushrooms, mesclun and pancetta in large bowl; toss gently. Serve topped with cheese.
