Tuna macaroni salad
  • 270 gram macaroni pasta halved lengthways
  • 180 gram green beans, trimmed
  • 1 fresh long red chilli, chopped finely (optional)
  • 2 teaspoon olive oil
  • 2 tablespoon red wine vinegar
  • 2 teaspoon wholegrain mustard
  • 2 tablespoon fresh chives, finely chopped
  • 2 tablespoon fresh flat-leaf parsley and basil leaves each
  • 250 gram cherry tomatoes, halved
  • 1 medium_piece (200g) red capsicum, sliced thinly
  • 425 gram canned tuna in springwater, drained, flaked

    Cook pasta in a large saucepan of boiling water until tender. Add beans to pan for the last 2 minutes of pasta cooking time, drain. Rinse under cold water, drain.

    To make dressing, combine chilli, oil, vinegar and mustard in a small bowl.

    Combine pasta, beans, herbs, tomato, capsicum, tuna and dressing in a large bowl, toss gently.
