1.Combine mirin, sauce, sake, sugar, ginger and garlic in large bowl; add pork, turn to coat in marinade. Cover; refrigerate 3 hours or overnight.
2.Drain pork; reserve marinade. Cook pork on heated oiled grill plate until browned and cooked as desired. Cover; stand 10 minutes.
3.Cook pineapple on grill plate about 2 minutes or until soft.
4.Bring reserved marinade to a boil in small saucepan; cook about 5 minutes or until sauce reduces by half.
5.Serve sliced pork with pineapple and onion; drizzle with sauce.
You can buy bottled teriyaki sauce at any supermarket, but it’s very easy to make yourself all you need is soy sauce, cooking sake, mirin and sugar. The key ingredient is the mirin, which gives both a lovely aroma and lustre to a dish: teriyaki actually translates as lustrous (teri) grilled (yaki) food.
