Spicy drumsticks with tomato, rocket & herb salad
  • 20 (1.5kg) chicken drumsticks
  • 1/4 cup (25g) sumac
  • 1/4 cup (60ml) olive oil
  • 1/2 (130g) lebanese cucumber , halved lengthways, sliced thickly
  • 2 medium tomatoes (300g), chopped coarsely
  • 1 medium green capsicum (bell pepper) (200g), chopped finely
  • 3/4 cup fresh flat-leaf parsley, coarsely chopped
  • 1/4 cup fresh mint, coarsely chopped
  • 50 gram baby rocket leaves (arugula)
  • 2 tablespoon lemon juice

    Combine chicken and sumac in large bowl.

    Heat 2 tablespoons of the oil in large frying pancook chicken, in batches, covered, turning occasionally, until browned and cooked through.

    Meanwhile, place remaining oil in large bowl with cucumber, tomato, capsicum, herbs, rocket and juice, toss gently.

    Serve chicken with salad.


Sumac is a purple-red, astringent spice ground from berries growing on shrubs that flourish wild around the Mediterranean, it adds a tart, lemony flavour to dishes. It can be found in Middle-Eastern food stores and most major supermarkets.
