2.Heat 2 tablespoons of the oil in large frying pancook chicken, in batches, covered, turning occasionally, until browned and cooked through.
3.Meanwhile, place remaining oil in large bowl with cucumber, tomato, capsicum, herbs, rocket and juice, toss gently.
4.Serve chicken with salad.
Sumac is a purple-red, astringent spice ground from berries growing on shrubs that flourish wild around the Mediterranean, it adds a tart, lemony flavour to dishes. It can be found in Middle-Eastern food stores and most major supermarkets.
