Ingredients

Spicy beef and green beans
  • 1 tablespoon peanut oil
  • 800 gram beef mince
  • 2 clove garlic, crushed
  • 3 centimetre piece fresh ginger (15g), grated
  • 2 long green chillies, sliced thinly lengthways
  • 300 gram green beans, halved lengthways
  • 1 medium brown onion (150g), sliced thinly
  • 1 tablespoon lime juice
  • 2 tablespoon light soy sauce
  • 1 tablespoon white sugar
  • 1/3 cup (45g) crushed roasted unsalted peanuts

Method

    Heat half the oil in wok; stir-fry mince, in batches, until browned and cooked.

    Heat remaining oil in wok; stir-fry garlic, ginger, chilli, beans and onion until beans are almost tender.

    Return mince to wok with juice, sauce and sugar; stir-fry until hot. Serve stir-fry sprinkled with nuts.
