Sausage, tomato & basil frittata
  • 6 beef chipolatas (180g)
  • 250 gram grape tomatoes
  • 6 eggs
  • 1/2 cup pouring cream
  • 1/4 cup fresh basil, shredded finely
  • 1/2 cup cheddar, grated coarsely

    Cook beef chipolatas in a heated oiled frying pan, over medium-high heat, until cooked through. Drain on paper towel; chop coarsely.

    Drain excess fat from pan. Return sausages to heated pan with tomatoes. Combine eggs, cream, fresh basil and cheddar in a large jug; season.

    Pour egg mixture over sausages; cook over low heat for 5 minutes or until frittata is almost set. Place frittata under preheated grill for 5 minutes or until set.
