1.Preheat oven to 220°C (200°C fan forced).
2.Using sharp knife, score pork rind by making shallow cuts at 1cm (½-inch) intervals.
3.Combine salt, chilli, flour and pepper in small bowl. Rub pork with oil, sprinkle with salt mixture. Roast, uncovered, 20 minutes.
4.Reduce oven to 180°C (160°C fan forced) roast, uncovered, about 1¼ hours. Cover pork loosely with foil, stand 10 minutes before slicing thickly.
