Saffron and brandy squid

Ingredients

Saffron and brandy squid
  • 4 cleaned squid hoods (300g), sliced thinly
  • 2 clove garlic, crushed
  • pinch saffron threads
  • 2 teaspoon hot water
  • 1 tablespoon olive oil
  • 2 tablespoon brandy
  • 100 gram baby spinach leaves

Method

    Combine squid and garlic in medium bowl.

    Place saffron in small dish; stir in the water.
  • 3
    Heat oil in large frying pan; cook squid until browned lightly, remove from pan.

    Add brandy to pan; cook about 30 seconds or until brandy has almost evaporated.

    Add spinach and saffron to pan; cook, stirring, until spinach is wilted. Return squid to pan; mix gently. Serve immediately.
