Ingredients: 4 cup (750g) chopped rockmelon; 2 tablespoon honey; 200 gram plain yoghurt; 1 tablespoon gelatine; 2 tablespoon water; 2 tablespoon passionfruit pulp

Ingredients

4 cup (750g) chopped rockmelon

2 tablespoon honey

200 gram plain yoghurt

1 tablespoon gelatine

2 tablespoon water

2 tablespoon passionfruit pulp

Method

1.Blend or process rockmelon, honey and yoghurt until smooth; transfer to large bowl.

2.Sprinkle gelatine over water in small jug; stand jug in small saucepan of simmering water, stir until dissolved. Stir gelatine mixture and passionfruit pulp into melon mixture.

3.Pour mousse into six ¾-cup (180ml) serving dishes; refrigerate several hours or until set.

You will need 1kg rockmelon and about 2 passionfruit for this recipe.
