Method

1.Blend or process rockmelon, honey and yoghurt until smooth; transfer to large bowl.
2.Sprinkle gelatine over water in small jug; stand jug in small saucepan of simmering water, stir until dissolved. Stir gelatine mixture and passionfruit pulp into melon mixture.
3.Pour mousse into six ¾-cup (180ml) serving dishes; refrigerate several hours or until set.

You will need 1kg rockmelon and about 2 passionfruit for this recipe.
