Method

1.Stir water, white miso, mirin, caster sugar, soy sauce and red miso in small saucepan over low heat until sugar dissolves; cool 5 minutes.

Add some crushed dried chilli for extra flavour. This sauce is typically served as an accompaniment to tofu and vegetables.
