Quick & easy minestrone
  • 30 gram butter
  • 1 medium_piece brown onion (150g), sliced thinly
  • 1 clove garlic, crushed
  • 2 bacon rashers (140g), chopped coarsely
  • 1 trimmed celery stalk (100g), chopped coarsely
  • 1 medium_piece carrot (120g), chopped coarsely
  • 400 gram can chopped tomatoes
  • 310 gram can red kidney beans, rinsed, drained
  • 3 cup (750ml) chicken stock
  • 1/3 cup spiral pasta
  • 1/4 cup (20g) flaked parmesan
  • 2 tablespoon fresh flat-leaf parsley, finely chopped


Quick & easy minestrone

    Heat butter in large saucepan, add onion, garlic and bacon; stir over medium heat until onion is soft. Add celery and carrot; stir over heat 2 minutes.

    Stir in undrained tomatoes, beans, stock and pasta. Bring to a boil, reduce heat; simmer, covered, 30 minutes.

    Serve topped with cheese and parsley.


Minestrone is a really easy, delicious soup that can be ready in less than an hour, and made up to two days ahead. Great on a cold day.
