1.Heat butter in large saucepan, add onion, garlic and bacon; stir over medium heat until onion is soft. Add celery and carrot; stir over heat 2 minutes.
2.Stir in undrained tomatoes, beans, stock and pasta. Bring to a boil, reduce heat; simmer, covered, 30 minutes.
3.Serve topped with cheese and parsley.
Minestrone is a really easy, delicious soup that can be ready in less than an hour, and made up to two days ahead. Great on a cold day.
