Prosciutto wrapped haloumi

Prosciutto and haloumi are a match made in nibble-platter heaven - or use this recipe to take this pumpkin, spinach and haloumi salad to the next level.

Prosciutto wrapped haloumi
  • 250 gram haloumi cheese
  • 6 slices gluten free prosciutto (90g)
  • 1 tablespoon lemon juice
  • 1 clove garlic, crushed
  • 450 gram bottled mixed olives and baby gherkins, drained

    Cut haloumi into 12 slices. Cut prosciutto in half crossways; wrap haloumi in prosciutto.

    Cook haloumi on a heated oiled grill pan (or grill or barbecue) over medium heat, 2 minutes each side or until prosciutto starts to crisp.

    Drizzle with combined juice and garlic; season to taste. Serve with mixed olives and gherkins.
