Ingredients

Prawn and brown rice salad
  • 1 teaspoon ground cumin
  • 2 teaspoon fish sauce
  • 1/3 cup (80ml) lime juice
  • 1/3 cup (80ml) extra virgin olive oil
  • 1 tablespoon sesame oil
  • 1 teaspoon white sugar
  • 600 gram small cooked prawns
  • 2 cup (250g) cooked brown rice
  • 1 medium (120g) carrot, julienned
  • 1 (400g) telegraph cucumber, peeled, seeded, chopped
  • 2 green onions (green shallots), sliced thinly
  • 1/4 cup mint leaves
  • 2 tablespoon sesame seeds, toasted
  • lime wedges, to serve

Method

Prawn and brown rice salad
  • 1
    Combine the cumin, sauce, juice, oils and sugar in a large bowl. Stir until the sugar is dissolved.

    Peel and devein the prawns; add to the bowl with the oil mixture, toss to coat the prawns.

    Add the rice, carrot, cucumber and green onions to the bowl; mix gently. Season to taste. Transfer to a large serving platter; top with mint leaves and sesame seeds and serve with lime wedges.
