Pea hummus smash toast

It's smashed avo toast, but not as you know it. This amazing creation is a sensory experience.

Ingredients

Pea hummus smash toast
  • ½ cup (120g) rinsed, drained canned chickpeas
  • ½ cup (60g) frozen peas, thawed
  • 4 scoops vanilla ENSURE
  • ¼ cup mint leaves
  • 1 tablespoon lemon juice
  • 1 tablespoon tahini
  • 1 clove garlic, crushed
  • 1 teaspoon ground cumin
  • 2 slices soy linseed bread, toasted
  • 50 grams yellow grape tomatoes, halved
  • 25g reduced-fat fetta, crumbled
  • 1 tablespoon seed and nut mix
  • fresh herbs, to serve

Method

Pea hummus smash toast
  • 1
    Process chickpeas, peas, Ensure, mint, lemon juice, tahini, garlic and cumin until almost smooth. Season to taste.

    Serve pea mixture on toast, sprinkled with tomato, fetta, seed mix and fresh herbs, if using.

Notes

TIP We used a seed and nut mix consisting of almonds, sunflower seeds and walnuts.
