1.Shell and devein prawns, leaving tails intact.
2.Heat half the oil in a large, heavy-based saucepan over medium heat and cook onion, garlic, celery, fennel, thyme and rind, stirring occasionally for 10 minutes. Add saffron, chilli flakes and tomato paste and cook stirring for about 5 minutes. Add wine and cook until liquid has almost evaporated. Add the water and simmer gently for 15 minutes or until vegetables are tender. Add tomato and cook until heated through. Stir in juice. Season to taste.
3.Meanwhile, cook pasta in a large saucepan of boiling water until almost tender, drain. Transfer pasta to a large bowl, add sauce and toss gently to combine.
4.Heat a large frying pan over high heat until very hot, add 1½ tablespoons of the oil and half the prawns, toss for 2 minutes or until just cooked through. Transfer to a bowl. Repeat with remaining oil and prawns.
5.Serve pasta mixture topped with prawns and parsley.

To remove skin from tomatoes, cut a small cross into the base of each tomato, then plunge in batches, into a saucepan of boiling water for 15 seconds. Remove with a slotted spoon and plunge into a bowl of iced water to cool. Drain, then peel away the skins.
