Olive oil & garlic mashed potato
This olive oil and garlic mashed potato is smooth, buttery and deliciously garlicky. If you prefer a milder, sweeter garlic flavour, you can add the cloves, uncrushed, to the water while the potatoes boil and then mash it all together.

- 1 kilogram coliban potatoes
- 2 clove garlic, crushed
- 50 gram butter
- 1/3 cup extra virgin olive oil
- salt, to taste
Method
Olive oil & garlic mashed potato
- 1Place potatoes in a large pan of cold water; bring to the boil. Cook 10 minutes, or until tender; drain and return to hot pan to dry out.
- 2Peel potatoes while still warm; mash until smooth.
- 3Stir in garlic, butter and oil; season to taste with salt. Serve with your favourite meat and vegetables.
