Olive oil & garlic mashed potato

This olive oil and garlic mashed potato is smooth, buttery and deliciously garlicky. If you prefer a milder, sweeter garlic flavour, you can add the cloves, uncrushed, to the water while the potatoes boil and then mash it all together.

1.Place potatoes in a large pan of cold water; bring to the boil. Cook 10 minutes, or until tender; drain and return to hot pan to dry out.
2.Peel potatoes while still warm; mash until smooth.
3.Stir in garlic, butter and oil; season to taste with salt. Serve with your favourite meat and vegetables.
