Beef mince and rice burritos

Combining microwave packet rice (or leftover rice to save food wastage)with beef mince flavoured with taco seasoning and canned corn means it’s super simple to create these satisfying burritos for an easy weeknight meal that will have the whole family asking for seconds.

Method

1.Preheat oven to moderate, 180°C. Lightly grease a large baking dish. Cook packet following packet instructions. Cool.
2.In a large frying pan, heat oil on medium. Saute capsicum, onion and garlic 4-5 minutes until tender. Add mince and cook stirring 4-5 minutes until browned.
3.Sprinkle over seasoning and cook 1 minute. Add tomatoes and water to pan and bring mixture to the boil. Simmer 4-5 minutes until mixture thickens. Stir in corn and rice. Season to taste.
4.Divide mince mixture between tortillas and roll up to enclose filling. Place into dish. Sprinkle with cheese. Bake 15-20 minutes until cheese is melted and golden.
5.Meanwhile, in a medium bowl, make guacamole by mashing avocado and lemon juice.
6.Serve burritos topped with sour cream, guacamole, salsa and coriander sprigs.

If preferred, replace the mince with shredded barbecue chicken – this will reduce cooking time.
