Ingredients

Lemon, garlic and chilli potato salad
  • 100 gram butter, softened
  • 2 clove garlic, crushed
  • 1 tablespoon finely grated lemon rind
  • 1 teaspoon dried chilli flakes
  • 1 kilogram baby new potatoes, unpeeled, cut into 1cm slices
  • 1/2 cup coarsely chopped fresh flat-leaf parsley
  • 1/4 cup coarsely chopped fresh chives

    To make lemon and chilli butter, combine butter, garlic, lemon rind and chilli flakes in small bowl.

    Boil, steam or microwave potato until tender; drain.
