Method
1.Finely grate and juice lemon. Combine rind, juice, rosemary and oil in small jug, place half of the mixture in medium bowl with pork; turn to coat pork in mixture.
2.Cook pork in heated oiled large frying pan until browned both sides and cooked as desired. Drizzle with remaining lemon mixture.
These cutlets will taste delicious served with a fresh summer salad or with potato mash and steamed vegetables in the cooler months.
