Ingredients

Fresh peas, caraway and parmesan
  • 60 gram butter
  • 1 teaspoon caraway seeds
  • 2 teaspoon finely grated lemon zest
  • 1 small red onion, thinly sliced
  • 4 cup fresh peas, shelled
  • 1/3 cup coarsely chopped fresh flat-leaf parsley
  • 1/2 cup finely grated parmesan cheese

Method

    In a large frying pan, melt butter; cook caraway seeds, lemon zest and onion, stirring, until onion softens.

    Add peas; cook, stirring, until peas are just tender. Stir in parsley; sprinkle with parmesan cheese.

Notes

You need about 1.3kg fresh peas to get the amount of podded peas required for this recipe.
