Ingredients

Deep-fried zucchini balls
  • 2 unpeeled zucchini (240g), grated coarsely
  • 2 teaspoon coarse cooking salt
  • 1 small brown onion (80g), chopped finely
  • 75 gram feta cheese, crumbled
  • 1/2 cup (75g) plain (all-purpose) flour
  • 1 egg
  • 2 tablespoon finely chopped fresh mint
  • 1 tablespoon milk
  • vegetable oil, for deep-frying

Method

Deep-fried zucchini balls

    Place zucchini in strainer; sprinkle with salt. Stand 10 minutes; squeeze excess moisture from zucchini.

    Combine zucchini, onion, cheese, flour, egg, mint and milk in large bowl; season.

    Heat oil in medium saucepan or wok. Deep-fry tablespoons of mixture, in batches, until browned. Drain on absorbent paper.
