Method

1.Preheat oven to 150°C (130°C fan-forced). Remove oysters from shells. Wash shells, place on oven tray, heat 10 minutes.
2.Toss oysters in cornmeal. Heat oil in large saucepan; deep-fry oysters, in batches, until browned lightly. Drain on absorbent paper. Serve oysters in hot shells; drizzle with chilli dressing.
3.To make chilli dressing; combine ingredients in screw-top jar; shake well.
