Ingredients

Cucumber with minted yogurt
  • 4 (520g) lebanese cucumbers
  • 2 cup (500ml) yogurt
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 clove garlic, crushed
  • 1/2 teaspoon ground cumin
  • 1 tablespoon lemon juice

Method

Cucumber with minted yogurt

    Halve cucumbers lengthways, scoop out seeds. Finely chop cucumbers.

    Combine cucumber with remaining ingredients in medium bowl, cover, refrigerate at least 1 hour before serving.
